Grown in the mountains near the famous archeological site Los Idolos, this blend of coffees are grown at altitudes from 1600m - 2000m from producers in Pitalita and San Augustin in Huila· This region has an abundant fresh water supply and rich volcanic soil with constant year round precipitation. Coffees are shade grown in small parcels and processed using the washed method then sun-dried.

Decaffeination is done using the natural Ethyl Acetate Process derived from sugarcane at the Descafecol plant in Manizales, Colombia. Ethyl Acetate is a compound commonly found in green coffee, as well as other fruits such as apples, pears, etc. The process is comprised of three major elements: Water, Steam, Ethyl Acetate

The Ethyl Acetate used in this process is of natural origin, obtained from the fermentation of sugarcane, and not from chemical synthesis
