Chapadao De Ferro is located within an extinct volcanic caldera in the prestigious coffee growing region of Cerrado. The Cerrado region tends to produce coffee that has their own unique taste and cup profile. Chapadao De Ferro translates to Plateau of Iron. It’s this volcanic soil that helps produce a more pronounced acidity with a sweeter aroma. This coffee is harvested only when ripe and processed using the pulp natural method. This method removes the skin of the cherry with aid of a depulping machine. The mucilage-covered coffee seeds are then laid out to dry on patios over a period of several days. This allows the mucilage and sugars to absorb into the bean which helps develop a more defined body and sweetness.
